what's cooking wednesday

One of my very favorite bloggers, sognatrice at bleeding expresso, does this feature which i anticipate with much salivation every week. when i asked her where this lovely idea came from, she sent me here... everyone should have a Fairy Blogmother! especially one who likes to cook!

i'm going to give it a go and share some of my "queen of the kitchen" stuff today too...here goes!


Chicken Chili (may also substitute ground turkey!)

Saute 4-5 cloves of garlic, ½ red onion, ½ white onion – all finely chopped – in olive oil (you decide how much, just don't let your stuff stick to the pot) until they are soft

Add 1 – 14 oz. can chicken broth
1 – 15 oz. can plain tomato sauce
1 – 14.5 oz. can Del Monte petite cut diced tomatoes with garlic & olive oil
1 – 15 oz. can pinto beans
1 lb. cooked chicken (white meat, no bones) or ground turkey

Let all simmer to blend the flavors.

Add a handful of chopped fresh basil
approx. a cup of fresh spinach leaves
approx ½ cup chopped fresh mozzarella cheese

Season with fresh ground pepper (the mix with black, pink & white pepper is best), sea salt & chili powder (approx 1 Tbsp.) to your taste

This is one meal at best for my nightly party of 6! I usually double the amounts to keep the 4 teens happy, and we do like this just fine the next night.


Sorry that my measurements are not-so-very-exact, but that is how i roll in the cucina!
